<p>Other power house nutrition vegetables are all the members of the cabbage family, including red and green cabbage, savoy cabbage, bok choy, and napa cabbage, broccoli, radishes, cauliflower, and Brussels sprouts.</p>
<p>Note that leagy greens lose much of their volume when cooked.  For example, a pound of raw greens will yield only about 1/2 cup of cooked leafy greens.  Recommended preparation methods include steaming, simmering, blanching, braising, and quick sauteing &#8211; in other words, almost anything except frying.</p>

<p>Not many people think about making homemade vanilla extract. It isn’t difficult to do at all and takes only a few supplies. The most difficult part of the process is waiting for it to age to perfection, which will take a few months. Why should you make your own vanilla? The benefits are astounding:</p>

<p>The main ingredients in basic homemade vanilla are vodka (or other high proof alcohol) and vanilla beans. You can use a variety of vanilla beans to create a more complex flavor, and use organic if you like.</p>

<p>There are even more vanilla bean varieties that that. Commercial manufacturers usually use the Bourbon or the Tahitian bean for extract. Look at all the flavor you could be missing!</p>

<p>The process couldn’t be simpler. You need:</p>
<ul>
<li> Quart Mason jar</li>
<li> Lid and screw down ring</li>
<li> 2 cups vodka</li>
<li> 6 vanilla beans</li>
</ul>
<p>1.  Cut the beans in half lengthwise.<br />
2.  Add the beans to the jar.<br />
3.  Cover with the Vodka.<br />
4. Store in a cool, dark place and shake every couple of days for at least a month. The longer you let it stand the more intense the flavor will be. I like mine to go at least six weeks. When it is just how you like it, strain it through a coffee filter or cheesecloth into dark bottles and seal tightly.</p>
<p><strong>Variations</strong></p>
<ul>
<li> Add a few buds of edible lavender.</li>
<li> Add a whole clove.</li>
<li> Add part of a a cinnamon stick.</li>
<li> Add a teaspoon of brandy per eight ounces. You can also make the vanilla in brandy or rum for a different flavor.</li>
</ul>
<p>You can vary the flavor of your vanilla by using different combinations of beans or adding another spice during storage.</p>
<p><strong>How to Use Homemade Vanilla</strong></p>
<p>You are going to use your homemade vanilla extract just like the commercial variety, measure for measure. You may find that you need a little less because of the flavor, or you may just get used to having the most amazing desserts on the block.</p>
<p>For gift giving, label the dark bottles with a custom made label. More than likely your friends will be knocking at your door for more as soon as they have used the last drop.</p>
<p><strong>Where to Buy Vanilla Beans</strong></p>
<p>You can buy vanilla beans almost anywhere but you probably won’t find much of a selection. Here are some Internet sites that carry a variety of beans, as well as organically grown beans:</p>

<p>Foods that are fried in vegetable oils like canola, soybean, safflower, corn, and other seed and nut oils are particularly problematic. These polyunsaturated fats easily become rancid when exposed to oxygen and produce large amounts of damaging free radicals in the body. They are also very susceptible to heat-induced damage from cooking. What is not commonly known is that these oils can actually cause aging, clotting, inflammation, cancer and weight gain.</p>
<p>It is theoretically possible to create a more &#8220;healthy&#8221; French fry if you cook it in a healthy fat like virgin coconut oil. Due to its high saturated fat content, coconut oil is extremely stable and is not damaged by the high temperatures of cooking. This is why coconut oil should be the only oil you use to cook with.</p>

<p>&#8220;Every man, woman and child consumes, on average, 43 teaspoons of sugar a day. In 13 days that adds up to a five-pound bag of sugar.&#8221; -John Mackey, CEO Whole Foods, Wall St Journal 10.3.09</p>
<p>I find this crazy:  Most adults and children are eating 1/4 to 1/2 of a pound of sugar every day.</p>
<p>A study published in the journal Pediatrics, found that</p>
<p style="padding-left: 30px;">10 to 15 percent of our children’s total calories are coming from fruit juice or soda (and juice, from a sugar point of view, is no better than soda).</p>
<p style="padding-left: 30px;">Children and teens aged six to eighteen, averaged 30 ounces of juice or soda every day (or 20 teaspoons of sugar).</p>
<p style="padding-left: 30px;">Younger children were drinking an average of 15.5 ounces of sugary drinks (or 10 teaspoons of sugar a day).</p>

<p>What is amazing about this study is that it only focused on sugars in drinks and not the cereal, cookies, jam, candies, crackers, ice cream and other foods our children are eating. Clearly, our children are eating a lot of sugar.</p>

<p><strong><span style="text-decoration: underline;">PROCESSED SUGARS</span></strong></p>
<ul>
<li><strong>Glucose</strong>: when we talk about blood sugar, this is what we are measuring. While it would be nice to be able to measure all sugars in the blood stream, this is all we can currently measure. Glucose is easily taken up by the cells of the body and used as a fuel source for all energy production.</li>
<li><strong>Fructose</strong>: Fructose is the twin brother to glucose and is the so-called “fruit sugar” because it is found in many fruits. The chemical structure of fructose is identical to glucose, it just has a different shape. That small difference is actually a big deal. Fructose tastes much sweeter that glucose and is used by the <a rel="nofollow" href="http://healthyeatingfood.net/goto/body_differently/36/3" target="_'blank'">body differently</a>.</li>
<li><strong>Sucrose:</strong> Sucrose is white table sugar and is a glucose molecule and a fructose molecule stuck together to form a disaccharide.</li>
<li><strong>Maltose</strong>: is two glucose molecules stuck together. It usually forms in the gut when starches are digested and is an important step in the creation of alcohol. Manufactures do use maltose in foods, but it is about 1/3 as sweet as sucrose.</li>
<li><strong>Lactose</strong>: Lactose is the sugar found in milk and milk products.</li>
<li><strong>High fructose corn syrup</strong>: High fructose corn syrup is the sweetener of choice for many food manufactures. It is cheap and tastes sweeter than sucrose. There are many scientists who are starting to question the health hazards of <a rel="nofollow" href="http://healthyeatingfood.net/goto/high_fructose_corn_syrup/36/4" target="_&quot;blank&quot;">high fructose corn syrup</a>.</li>
<li><strong>Maltodextrin</strong>: Maltodextrin is a polysaccharide (larger than a disaccharide) that is easily broken down into glucose on digestion. It is generally used as a sort of “glue” when food manufactures are looking to hold a product together.</li>
<li><strong>Dextrose</strong>: This is the same as glucose.</li>
<li><strong>Dextrin: </strong>Dextrins are larger chains of glucose molecules stuck together, an example is maltodextrin.</li>
<li><strong>Brown Sugar</strong>: Brown sugar is either slightly unrefined white sugar or white sugar that has molasses added back into it.</li>
</ul>
<p><strong><span style="text-decoration: underline;">NATURAL SUGARS</span></strong></p>
<ul>
<li><strong>Turbinado sugar</strong>:  Turbinado sugar is made by pressing sugar cane and then evaporating the water from the juice.</li>
<li><strong>Raw Sugar</strong>: There are many forms of raw sugar (including Turbinado) and they are all mostly the same: made from sugar cane and then evaporated.</li>
<li><strong>Honey</strong>:  Honey is the original processed sugar it is about 1/2 fructose and 1/2 glucose.</li>
<li><strong>Agave</strong>: Agave come from same plant that gives us tequila. It is said to not raise blood sugar, but what they mean is it does not raise blood glucose because agave is mostly fructose.</li>
<li><strong>Maple Syrup</strong>: Made from tree sap and is not a significant source of nutrients besides iron and zinc.</li>
<li><strong>Molasses</strong>: Molasses is byproduct of sugar manufacturing. It does contain iron in significant amounts, but much better to get iron from other sources.</li>
<li><strong>Evaporated Cane Sugar:</strong> The same as raw sugar or Turbinado sugar.</li>
<li><strong>Fruit juice concentrate</strong>: This sugar is mostly fructose made by concentrating different juices (usually grape).</li>
<li><strong>Xylitol</strong>: Xylitol is almost a fiber as it is derived from the fibrous portion of corn husks and peanuts. It is less sweet than sugar and can actually inhibit cavities. It shows up in a lot of natural chewing gums.</li>
</ul>

And omega-3s are really good fats.  The most well researched omega 3 is more about benefits of fish oil.</p>
<p>These fatty acids, which are essential for human growth and development, are most often associated with coldwater fish and certain fruits and vegetables, but they also occur in abundance in <a rel="nofollow" title="Grass fed beef" href="http://healthyeatingfood.net/goto/grass_fed_beef/29/2" target="_blank">grass-fed beef</a>. Grass fed meat is a rich source of this healthy fat because the  animals spend their lives eating the green forage plants that are naturally rich in omega-3s themselves. Just by eating their natural diet, the cattle absorb these valuable fats and then pass the nutrition on to you. The result is beef that has nearly 60% more omega-3s than beef from cows that have been raised on a low-omega-3 grain diet.<!-- WSA: ad in context default not shown: too many ads --></p>
<p>Chicken and the eggs from pasture raised (free-range) chickens are also good sources of Omega 3&#8242;s.</p>

<p>Most people think the best food source  is  fish for omega 3.   Be educated before eating fish and know that you need <em>wild caught fish</em>.  Today too much fish is  farmed with the fish being fed pellets of food that isn&#8217;t even close to the fish&#8217;s natural diet like natural algae found in wild caught fish waters.  Fish quality is lowered because of waters  polluted due to industrial waste in the oceans and harbors toxins like mercury and PCB&#8217;s that have accumulated in the flesh.</p>
<p>I&#8217;m not a fish eater but I do use Carlson&#8217;s Cod Liver Oil (lemon flavor <img src='http://healthyeatingfood.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> ) for essential fatty acids supplements.</p>
<p>Omega-3 fatty acids are found in fish, nuts, seeds and oils.  Some fruits and vegetables are good sources of omega-3s.  Eat kidney beans, navy beans, tofu, winter and summer squash, certain berries such as raspberries and strawberries, broccoli, cauliflower, green beans, romaine lettuce, and collard greens.  Don&#8217;t forget that <a rel="nofollow" title="Grass fed beef" href="http://healthyeatingfood.net/goto/grass_fed_meats_/29/3" target="_blank">grass-fed meats </a>and poultry, and their eggs are also sources of omega-3s.<span id="more-29"></span></p>
